Seasonings and alanine are used in alcoholic beverages. Add: wine 0.4%, whisky 0.2%, champagne 1%. Others such as soup powder add about 2%; the lees marinated food 1%. It can be used as seasoning because of its taste of shrimp and cuttlefish.
It can inhibit the propagation of Bacillus subtilis and Escherichia coli. Therefore, it can be used as a preservative for surimi products and peanut butter, with the addition of 1% – 2%.
Because glycine is an amphoteric ion with amino and carboxyl groups, it has a strong buffering effect. It can buffer the taste of salt and vinegar. The amount of added salt is 0.3% ~ 0.7%, and the pickling product is 0.05% ~ 0.5%.
Antioxidant effect (using its metal chelating action) added to cream, cheese, margarine, can extend the shelf life of 3~4 times.
