Calcium propionate (also known as calcium propanoate) is an organic salt with the chemical formula Ca(C2H5COO)2. It’s the calcium salt of propionic acid.Its primary use is as a food additive, specifically as a preservative. It is listed as E number 282 in the Codex Alimentarius.
Baked goods: This is its most common application, especially in bread, cakes, pastries, muffins, and tortillas, to prevent mold growth. It’s particularly effective in yeast-leavened products as it doesn’t inhibit yeast fermentation.
Dairy products: Used in cheeses, powdered milk, whey, and yogurt to control microbial growth.
Processed meats: Can be found in hot dogs, ham, and lunch meats.
Other foods: Sometimes used in fruit juices, certain snacks, and prepared meals.
Agriculture: Used as a feed supplement for livestock and to prevent milk fever (a calcium deficiency disease) in cows.
