Carboxymethyl cellulose (CMC), also known as cellulose gum, is a cellulose derivative with carboxymethyl groups attached to some of the hydroxyl groups of its glucopyranose monomers. Essentially, it’s a modified form of cellulose that becomes water-soluble. It’s often used in its sodium salt form, called sodium carboxymethyl cellulose.
