Het is een wit kristallijn poeder, geurloos of bijna geurloos, met een licht zure smaak. Fumaraat komt in de natuur in verschillende planten in vrije vorm of als ester voor en kan ook worden geproduceerd via chemische synthese. In de voedingsindustrie wordt het voornamelijk gebruikt als zuurteregelaar en pH-regelaar, omdat het een milde zuurtegraad kan bieden en de smaak van voedsel kan versterken.<br \/>\nFumaarzuur van voedingskwaliteit wordt voornamelijk gebruikt als zuurteregelaar in dranken, gebak, jam, gelei en andere voedingsmiddelen. Het wordt ook vaak gebruikt in wijn en vruchtensappen om de zuurtegraad aan te passen en de smaak te verbeteren. Daarnaast heeft fumaarzuur antioxiderende eigenschappen en kan het als antioxidant worden gebruikt om de houdbaarheid van voedsel te verlengen. In sommige gevallen wordt het ook gebruikt als buffer om de pH-waarde van voedsel stabiel te houden tijdens verwerking en opslag.
