Si presenta come una polvere cristallina bianca, inodore o quasi inodore, dal leggero sapore acidulo. Il fumarato \u00e8 presente in natura in diverse piante, allo stato libero o sotto forma di estere, e pu\u00f2 anche essere prodotto attraverso metodi di sintesi chimica. Nell'industria alimentare, viene utilizzato principalmente come regolatore di acidit\u00e0 e pH, poich\u00e9 pu\u00f2 conferire una leggera acidit\u00e0 e migliorare il sapore degli alimenti.<br \/>\nL'acido fumarico di grado alimentare viene principalmente utilizzato come agente acidificante in bevande, prodotti da forno, marmellate, gelatine e altri alimenti. \u00c8 anche comunemente utilizzato nel vino e nei succhi di frutta per regolare l'acidit\u00e0 e migliorarne il sapore. Inoltre, l'acido fumarico ha propriet\u00e0 antiossidanti e pu\u00f2 essere utilizzato come antiossidante per prolungare la durata di conservazione degli alimenti. In alcuni casi, viene utilizzato anche come tampone per mantenere stabile il pH degli alimenti durante la lavorazione e la conservazione.
