Fumaraat esineb erinevates taimedes vabas olekus v\u00f5i estri kujul ning seda saab toota ka keemilise s\u00fcnteesi meetodite abil. Toiduainet\u00f6\u00f6stuses kasutatakse seda peamiselt happesuse ja pH regulaatorina, kuna see v\u00f5ib anda toidule kerget happesust ja parandada maitset.<br \/>\nToidukvaliteediga fumaarhappe peamised kasutusalad h\u00f5lmavad happesuse parandajat jookides, kondiitritoodetes, moosides, tarretistes ja muudes toiduainetes. Seda kasutatakse tavaliselt ka veinis ja puuviljamahlas happesuse reguleerimiseks ja maitse parandamiseks. Lisaks on fumaarhappel ka antioks\u00fcdantsed omadused ja seda saab kasutada antioks\u00fcdandina toidu s\u00e4ilivusaja pikendamiseks. M\u00f5nel juhul kasutatakse seda ka puhvrina, et s\u00e4ilitada toidu stabiilne pH v\u00e4\u00e4rtus t\u00f6\u00f6tlemise ja ladustamise ajal.
